yeah your brother sucks.
Nelfs arent THAT great as priest, draenei have the slight edge what with fear ward and all. if you really care that much go for it but i would recommend staying draenei.
as for profession go miner enchanter or herb enchant, level your enchant to 225 and de things. you will NOT i repeat NOT make money off giving enchants, only by disenchanting greens you cant use and selling off the mats. works for me.
skinning is viable but annoying to level imo
